In the early 1960s, a writer named John McPhee got curious about a fruit he was eating on his way to work. He would buy oranges near Penn Station in New York and squeeze them, and he began to notice that no two tasted quite the same — some pale and thin, some almost syrupy, some sold as fresh that turned out to be anything but. So he did what he tended to do: he pulled the thread. He went to Florida, to the groves and the packinghouses, to Spain and to the labs where scientists were re-engineering the fruit, and he came back with a small book, published in 1967, simply called Oranges.

It reads like nothing you'd expect from a subject that sounds this modest. McPhee treats the orange the way a good detective treats a room: every detail is evidence of something larger. The color of the skin, it turns out, tells us almost nothing about ripeness. The word itself traveled halfway around the world before it reached us. And the glass of juice most of us think of as the purest thing in the fridge is one of the most heavily processed products in the American diet. The closer he looks, the stranger the ordinary fruit becomes.

What McPhee found is that an orange is never just an orange. It is a piece of agriculture, of chemistry, of labor and of history, compressed into something we peel without a second thought. Following it closely turns a snack into a map of how the modern food system actually works — and of everything we've agreed not to notice.

Chapter 1 — The fruit that isn't what we think

The first thing McPhee dismantles is our confidence that we know what an orange is. We picture a bright, uniform sphere, sweet, seedless, ideally orange in color. Almost none of that is reliable. A perfectly ripe orange can be green, especially in tropical climates where the skin never loses its chlorophyll; some of the sweetest fruit in the world looks, to a supermarket eye, unfinished. The vivid color we associate with quality is partly an accident of temperature and, in some places, a little help from dye and gas applied after picking. The orange we recognize is as much a product of expectation as of biology.

Then there is the sheer variety, which the modern shelf hides from us. McPhee catalogs a bewildering range — navels, Valencias, blood oranges, temples, tangelos, sour oranges nobody eats straight — each with its own season, chemistry, and use. The tangerine, the grapefruit, the lemon and the lime are all part of the same restless family, a group of species that hybridize so readily that botanists have argued for centuries about what counts as a true orange at all. What we buy is a narrow selection from an enormous, tangled genus, chosen less for taste than for how well it ships and stores.

Chapter 2 — The tree that never comes true from seed

The strangest fact McPhee uncovers is that the orange tree is, in a sense, an illusion of stability. Plant a seed from a delicious orange and you will not get that orange back. Citrus does not breed true; the offspring are genetic gambles, mostly disappointing, occasionally freakish. So the fruit we eat does not descend from parent to child in any ordinary way. It is copied. Every commercial Valencia is, effectively, a cutting of the same original tree, kept alive and multiplied for generations by a craft that has almost nothing to do with sex and everything to do with surgery.

That surgery is grafting, and McPhee describes it with the care of someone who has watched it done a thousand times. A grower takes a bud from a proven tree and slips it under the bark of a young rootstock — often a different, hardier species entirely. The two grow together into a single plant with a split identity: roots chosen for toughness and disease resistance, top chosen for the fruit we want. A single orange tree can therefore be two organisms fused at the trunk, and a whole grove can be thousands of genetic copies of one ancestor, standing in rows.

Chapter 3 — Concentrate, and the end of the fresh orange

The book's center of gravity is a transformation McPhee watched unfold in real time: the rise of frozen concentrated orange juice, and the way it quietly rewrote the entire economics of the fruit. Developed in the 1940s and exploding after the war, concentrate solved a problem that had haunted the industry — fresh oranges are perishable, awkward to ship, and wildly variable. Boil the juice down, freeze it, and you have a stable commodity that can be stored, blended, and sold year-round. By the time McPhee was writing, the majority of Florida's crop was no longer being eaten as fruit at all. It was being poured into it.

He takes us inside the concentrate plants, and the scene is startling for anyone who imagines juice as simple. Oranges arrive by the truckload and vanish into a continuous industrial process — extracted, evaporated, the volatile aromas captured and added back because the concentration strips out the very flavors that make juice taste like juice. What comes out the other end is engineered as much as squeezed. McPhee reports it without outrage, but the implication lands: the wholesome glass of morning juice is a manufactured product, standardized to taste the same in January as in June, precisely because no single orange could be trusted to.

Chapter 4 — The people who never appear on the carton

Step back from the chemistry and the machinery, and the orange starts to look like something else entirely: a container for human labor that the finished product is designed to hide. McPhee never lets us forget the people. Oranges do not fall neatly into crates; they are picked, one by one, by hand, from ladders, in heat, by workers whose speed and endurance set the whole harvest's pace. Behind the smooth, anonymous carton in the store lies a long chain of grove hands, pickers, packers, graders, and truckers, almost none of whom the buyer will ever picture.

This is the quiet argument that lifts the book above a technical manual. Following an orange back to its source means following a supply chain of effort — the migrant crews who move with the ripening fruit, the packinghouse workers sorting at speed, the growers gambling a year's income on the weather. McPhee gives them faces and voices, the eccentric old cultivators and the plant scientists and the men who can taste a grove's soil in its fruit. The industry that produces our most casual snack turns out to rest on skilled, precarious, physically punishing work.

Conclusion

McPhee began with a glass of juice near a train station and ended with something close to a full account of how a fruit becomes a commodity — the botany that makes it possible, the grafting that keeps it uniform, the factory that dissolves it into concentrate, and the hands that carry it every step of the way. The small book about oranges turns out to be a book about almost everything an orange touches, which is more than we ever assumed. The subject was never modest; only our attention was.
